I was born and raised in south Italy, amazed by the best of the best ingredients and food culture you can only imagine.
I have worked in several kitchens, ranging from the classic English pub (with lovely English recipes) to top end Italian restaurants in the heart of Soho in London.
My cooking wants to be a nostalgic way to think of all the things that truly inspired me most when I was little. The food in Italy is truly something to worship, and I, as most Italians, do.
How? Simply caring, being gentle with everything that mother Earth gave us. This leads to very simple, but effective cooking; respecting each and every ingredient, giving the love it needs, so in the moment of truth, tasting it, is really all about home and nostalgia.
