This menu is composed of simple and tasty Italian dishes that are satisfying and look fantastic. My inspiration comes from using Italian ingredients and creating a combination of delicious flavours. I grew up in a family restaurant and my fathers parents also lived with us. My nonna Lucia, whom I am named after, inspired me with her love of cooking. Her patience, as she showed me how to cook in our kitchen, was amazing.
with sweet tasting Heirloom Tomatoes, Bufalla Mozzarella and basil pesto. This is all sprinkled with wild organic oregano and the taste is lovely.
Lucia's Lasagna - My special recipe Lasagna, sheets of pasta layered with a rich tomato and mince sugo and bechamel sauce. The sugo is infused with red wine and fresh basil to tantilise your taste buds. This dish can also be made to suit vegetarians and for this the recipe changes to spinach and ricotta with a nutmeg spice and plain red tomato sugo.
Marscarpone Magic - a beautifully creamy coffee liqueur infused cream with fresh seasonal fruit folded in. Savioardi biscuits dipped in coffee are at the base of this delicate creation. It is topped with crushed ammareti biscuits. Sensational!
